Know.Better.LunchBox: Easy, Healthy Ideas for Back-to-School

September 22, 2015

Whether you’ve got a picky eater or not, coming up with easy, healthy back-to-school lunch ideas and snacks for your kids can be an annual conundrum. You want it to be wholesome and hearty, but not take too much time to make. They tend to want colorful finger foods that can be eaten quickly, so they can get on to more important things – like the playground. What’s a parent to do? Take a look at some of the ideas below that are bound to catch a kid’s eye, whet their appetite and not come home in their lunchbox at the end of the day.

And remember that healthy, alkaline-rich snacks like almonds, sunflower seeds, celery sticks with nut butter, hummus with veggies, watermelon and berries are easy ways to round out any nutritious lunch.

Turkey & Cheese Wafflewich

A sammy made with whole grain waffles instead of bread is a fun, healthy twist on the traditional sandwich.

Popcorn Trail Mix

Try a homemade snack mix that’s healthier and more affordable than the store-bought kind. Plus, it makes a big batch that can be divided into eight small storage containers.

Nut Butter Banana Wrap

Nothing could be easier to make or to eat! Spread nut butter on a whole wheat tortilla, place a peeled banana on top, roll it up and cut in half.

Spinach Mac ‘n Cheese Muffins

These are a great make-ahead, freezer-friendly option. Simply re-heat in the microwave, and keep warm in a thermos till lunchtime. (So cheesy and delicious, they won’t even taste the spinach. Promise.)

No-Bake Dark Chocolate Cherry Granola Bars

Incredibly simple to make, packed with whole grains and flax seed.
